Dried chillies add spice to David Massey's pancetta and red wine pasta sauce

 

Tomato sauce with pancetta and red wine

Method

 
1. Heat the olive oil in a frying pan and fry the pancetta with the dried chillies until crisp.

2. Pour in the red wine and reduce by half, before stirring in the tomato sauce and oregano.

3. Season to taste, simmer for 5 minutes and serve with penne and grated Parmesan.

2 tbsp Olive oil
250g Pancetta, cut into matchsticks
2 dried chillies, flaked
150ml Red wine
500ml basic Tomato Sauce
2 tbsp chopped oregano

To serve

penne
Parmesan, grated
