Tomato sauce with goat's cheese, anchovies and rocket

Method

 
1. Heat the olive oil in a saucepan and fry the anchovies until they have broken down.

2. Stir in the capers and the olives, then pour in the tomato sauce and adjust the seasoning if necessary. Simmer gently for five minutes.

3. Crumble the goat's cheese into the sauce.

4. Garnish with rocket and Parmesan shavings, and serve with penne pasta.

2 tbsp Olive oil
20g anchovies
20g small capers
20g black olives, pitted
500ml basic Tomato Sauce
45g goat's cheese
handful wild rocket
parmesan shavings
salt and pepper
