Merrilees Parker from Food Uncut
Bursting with the peppery flavour of rocket, this simple sauce from Merrilees is great with hot or cold pasta

 

Rocket pesto

Method

 
1. Put all the ingredients except the Parmesan in a food processor and blitz to a smooth paste.

2. Stir in the grated Parmesan and season to taste with sea salt and freshly ground pepper.

125g Rocket, trimmed and roughly chopped
2 tbsp chopped flat-leaf parsley
2 garlic cloves, finely chopped
50g pine nuts, toasted and roughly chopped
100ml extra virgin olive oil
50g Parmesan, grated
freshly ground salt and pepper
