Spicy courgette fritters with tomato and chive mayonnaise

Method

 
1. To make the mayonnaise, put the egg, egg yolk, mustard, sugar, salt and pepper into a processor and whiz to combine.

2. Keeping the motor running, gradually add the olive oil, in a steady stream, until all the oil has been added and you have a thick mayonnaise. If it is too thick, whiz in a tablespoon or two of near boiling water to thin it down a little.

3. Add the balsamic vinegar and whiz again. Spoon the mayonnaise into a serving bowl and stir in the diced tomatoes and chives. Cover and refrigerate until ready to serve.

4. For the fritters, heat half of the olive oil in a large frying pan and add the courgettes, garlic and chilli. Stir in the salt.

5. Cook for 3-4 minutes, until the courgettes are soft and golden.

6. Mix all the ingredients for the batter together and beat until smooth.

7. Stir in the cooked courgette mixture.

8. Heat the remaining oil in a frying pan and drop spoonfuls of the courgette mixture into the hot oil. Cook for 2 minutes. Turn the fritters over and cook for a further 2 minutes. Drain on absorbent paper and serve warm, with the mayonnaise.

Ingredients


For the mayonnaise

1 large egg
1 egg yolk
1 tsp Dijon mustard
1/2 tsp caster sugar
1 tsp salt flakes
300ml extra virgin olive oil
1 tbsp Balsamic vinegar
3 Tomatoes, each skinned, seeds removed and tomatoes diced small
1 tbsp snipped Chives
freshly ground black pepper

For the courgettes

6 tbsp Olive oil
6 small courgettes, diced
2 garlic cloves, finely chopped
1/2 tsp dried chilli flakes
1/2 tsp salt flakes

For the batter

170g plain flour
1.5 tsp Baking powder
1/2 tsp salt flakes
freshly ground black pepper
300ml Milk
1 large egg
