Oozing with tasty ingredients, Ed Baine's Mediterranean-style meat patties with sour cherry sauce and Greek yogurt are sure to become a favourite

 

Beef and pork mince patties with sour cherry sauce

Method

 
1. Soak the dried berries in boiling water for 20 minutes. Drain and reserve the water.

2. Heat the olive oil in a saucepan and fry the onions for about 3 minutes, until softened.

3. Add the berries and cook for 2 minutes.

4. Stir in the dates, bay leaves and reserved water. Simmer for 5 minutes.

5. Add the sherry vinegar and keep warm.

6. Meanwhile, make the patties. Using a pestle and mortar, pound the garlic, ginger and a pinch of salt to a paste. Transfer the mixture to a bowl and add the pork and beef.

7. Add the remaining ingredients and mix thoroughly.

8. Shape into patties and dust in flour.

9. Heat the oil in a frying pan and fry the patties for 3-4 minutes on each side, until cooked. Drain on kitchen paper and keep warm in a low oven.

10. Spoon the patties into serving bowls and spoon over the sauce. Serve with Greek yogurt and a green salad.

Ingredients


For the sour cherry sauce

60g dried blueberries
60g dried cranberries
75g dried sour cherries
4 tbsp Olive oil
6 Dates
3 Bay leaves
1 tbsp sherry vinegar

For the patties

14 garlic cloves
2 tbsp chopped ginger
pinch Salt
250g minced pork
250g minced beef
1 jar roasted red peppers, drained and chopped
1 jar Italian mustard fruits, drained and chopped
2 Onions, chopped
1 tbsp ground cumin
1/2 tbsp ground cinnamon
1 tbsp Turmeric
bunch Coriander, chopped
bunch Mint, chopped
bunch Parsley, chopped
1 lemon, zest and juice
1 tbsp Honey
1 tbsp Balsamic vinegar
1 egg, beaten
50g plain flour, for dusting
50ml vegetable oil, for frying

To serve

250ml Greek yogurt
green salad
