Method

1 Mango, diced1/4 pineapple, diced
1 papaya, seeds removed and diced
1/2 red onion, diced
2 garlic cloves, minced
1 Jalapeño pepper, diced
1 tbsp Mint, chopped
small bunch Parsley, chopped
2 tbsp lemon juice
2 tsp orange juice
6 x 120g snapper fillets
