Stir-fried pak choi with shitake mushrooms

Method

 
1. Cut the stalks from the pak choi and cut the stalks away from the leaves and set aside. Bring a large pan of lightly salted water to the boil.

2. Cut the stalks into large chunks and blanch in boiling water for 2-3 minutes. Drain well in a colander. The leaves are tender so there is no need to blanch them.

3. Wash and trim the leeks before slicing diagonally. Thickly slice the mushrooms.

4. Heat the oil in a wok set over a moderate heat. Add the garlic, leeks and mushrooms and stir-fry for 2-3 minutes. Add the sugar, sesame oil, rice wine and soy sauce.

5. Cook for another 2 minutes, before tipping in the pak choi, and warming through over a high heat. Season with pepper and serve in warmed bowls.

450g pak choi
6 baby leeks
350g shitake mushrooms
2 garlic cloves, finely sliced
pinch Sugar
1 tsp Sesame oil
1 tbsp rice wine
3 tbsp dark Soy sauce
cracked black pepper
