Spiced salmon with dill sauce

Method

 
1. Toast the spices in a saucepan over a medium heat until fragrant. Grind to a powder and rub over the salmon.

2. Heat a non-stick frying pan and cook the salmon for 3-4 minutes on each side, until cooked through and golden.

3. Meanwhile, place all the ingredients for the dill sauce in an electric liquidiser and process until smooth.

4. Serve the salmon straight from the pan, with lashings of dill sauce.

Ingredients

1/2 tsp celery seeds
1/4 tsp Turmeric
2 Juniper berries
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp Chilli powder
1/4 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp Black peppercorns, ground
1 tsp Paprika
1/2 tsp dried thyme
4 x 100g salmon fillets

For the dill sauce

250ml Yogurt
125ml Soured cream
1 Cucumber
1 garlic clove, crushed
1/2 tsp Black peppercorns, ground
4 Lemons, juice only
bunch Dill
