Hot chicken wings and carrot and raisin salad
Method
2. Heat the oil in a frying pan and add the butter. Fry the chicken wings over a moderate heat until golden. You can also deep-fry the wings if you'd prefer.
3. Heat the jar of hot sauce with the butter and simmer for 5 minutes.
4. For the salad, simply combine all the ingredients and pile on top of the lettuce leaves.
5. Arrange the wings on a plate and drizzle over the hot sauce. Serve with the carrot and raisin salad. Garnish with celery sticks and serve with blue cheese dressing.

Ingredients
For the chicken
230g plain flour2 tbsp Cajun seasoning
6-10 chicken wings
vegetable oil, for shallow frying
2 tsp Butter
salt and pepper
For the hot sauce
1 jar Louisiana hot sauce or similar hot pepper sauce250g Butter
For the carrot and raisin salad
6 Carrots, shreddedhandful raisins
1 x 200g can pineapple chunks, drained
dash of Malt vinegar
2 tbsp mayonnaise
2 baby gem lettuce, leaves separated
salt and pepper
To garnish
celery sticksblue cheese salad dressing
