Ingredients

For the chicken

  • 230g plain flour
  • 2 tbsp Cajun seasoning
  • 6-10 chicken wings
  • vegetable oil, for shallow frying
  • 2 tsp Butter
  • salt and black pepper

For the hot sauce

  • 1 jar Louisiana hot sauce or similar hot pepper sauce
  • 250g Butter

For the carrot and raisin salad

  • 6 Carrots, shredded
  • handful raisins
  • 1 x 200 g can tinned pineapple chunks, drained
  • dash of Malt vinegar
  • 2 tbsp mayonnaise
  • 2 baby gem Lettuce, leaves separated
  • salt and black pepper

To garnish

  • sticks Celery
  • blue cheese salad dressing

Method

1. Combine the flour with the salt, pepper, and Cajun seasoning. Cut the tips off the chicken wings and season with the spiced flour mixture.

2. Heat the oil in a frying pan and add the butter. Fry the chicken wings over a moderate heat until golden. You can also deep-fry the wings if you'd prefer.

3. Heat the jar of hot sauce with the butter and simmer for 5 minutes.

4. For the salad, simply combine all the ingredients and pile on top of the lettuce leaves.

5. Arrange the wings on a plate and drizzle over the hot sauce. Serve with the carrot and raisin salad. Garnish with celery sticks and serve with blue cheese dressing.
