Lemon mascarpone cream

Method

 
1. Combine the mascarpone cheese, crème fraîche and caster sugar. Stir in the lemon juice and zest, followed by the crushed meringues. Streak in the lemon curd.

2. Spoon the mixture into brandy snap baskets, or shape into quenelles.

80g Mascarpone
60g crème fraîche
30g caster sugar
1 lemon, zest and juice
3 tbsp lemon curd
1 handful lightly crushed meringues
4 small brandy snap baskets, to serve (optional)
