Mini C gets creative with tangy beef salad, flavoured with fish sauce lemon juice and sugar

 

Thai beef salad

Method

 
1. Preheat a grill until very hot. Cook the beef for 2-3 minutes on each side, until medium-rare. Cook for a minute or so longer if you prefer your meat well cooked. Leave on one side to cool

2. Pound the chillies and garlic into a paste and transfer to a small mixing bowl. Whisk in the fish sauce, sugar and lemon juice

3. Thinly slice the beef and combine with the dressing. Stir in the cucumber, tomato, onion and spring onion. Scatter with the coriander leaves and transfer to a serving plate.

Ingredients

1 x 200g topside of beef
2 bird's eye chillies
1 garlic clove
1.5 tbsp Fish Sauce
1 tsp Sugar
1.5 tbsp lemon juice
3 cm piece Cucumber, thinly sliced
1 tomato, cut into wedges
1 small onion, thinly sliced
1 spring onion, chopped
coriander leaves, for garnishing
