Tamasin Day-Lewis creates a classic cranberry sauce that makes the ideal accompaniment to serve with traditional Christmas fare
Tips and suggestions
- Eat with...
- Traditional roast turkey
Ingredients
- 340g Cranberries
- 170g caster sugar
- 1 Orange, juice and zest
Method
1. Place the cranberries, sugar and orange juice together in a saucepan and bring to the boil.2. Simmer the mixture over a gentle heat for about 10 minutes or so, until the berries begin to burst. Remove from the heat to ensure that the berries hold their shape.
3. Taste the sauce for sweetness; you may need to add a little more sugar.
4. Gently fold in the orange zest, taking care not to break up the berries. Transfer to a bowl and leave to cool. Cover with cling film and refrigerate until ready to serve.
