Victorian Style Curried Chicken

Method

 
1. Make the curry powder by toasting the spices in a dry pan until fragrant.

2. Grind, using a pestle and mortar.

3. Rub this curry powder over the chicken joints.

4. Heat half of the oil in a frying pan and fry the onions until golden. Remove from the pan and keep warm.

5. Heat the remaining oil and fry the chicken until crisp. Serve with the fried onions and accompany with lemon wedges.

Ingredients


For the curry powder

115g Coriander seeds
112g ground turmeric
1 tsp ground cinnamon
15g cayenne
30g Mustard seeds
30g ground ginger
15g allspice
50g Fenugreek seeds

For the chicken

2.5kg ready-roasted chicken, cut into 8 pieces
4 tbsp Olive oil
4 Onions, sliced
1 lemon
