Coconut dipping sauce

For a great accompaniment to fish, chicken or beef, make Ed Baines' addictive Asian dipping sauce
Ingredients
- 100ml coconut cream
- 75 ml hot water
- 100g Peanuts
- 1 tsp Fish Sauce
- 1 small bird's eye chilli, chopped
- 1 lime, juice only
- 1 tbsp chopped Coriander
Method
1. Combine the coconut cream and hot water and pour into a blender. Add the peanuts, fish sauce, chilli and lime juice and process until smooth.2. Stir in the coriander and serve in small bowls as a dipping sauce.
