For a great accompaniment to fish, chicken or beef, make Ed Baines' addictive Asian dipping sauce

Ingredients

  • 100ml coconut cream
  • 75 ml hot water
  • 100g Peanuts
  • 1 tsp Fish Sauce
  • 1 small bird's eye chilli, chopped
  • 1 lime, juice only
  • 1 tbsp chopped Coriander

Method

1. Combine the coconut cream and hot water and pour into a blender. Add the peanuts, fish sauce, chilli and lime juice and process until smooth.

2. Stir in the coriander and serve in small bowls as a dipping sauce.
