Ring in the festive season with Wayne Collins' fruity spiced punch - it's worth throwing a party for

Ingredients

  • 3 x 4 cm cinnamon sticks, broken
  • 5 Cloves, lightly crushed
  • 1 Nutmeg, grated
  • 100 ml boiling water, approximate quantity
  • 250ml cider or apple juice
  • 450ml gin
  • 250 ml lychee liqueur
  • 75ml clear Honey
  • 700ml Sauvignon blanc White wine
  • Sugar, to taste
  • 1 large Orange, pared zest
  • 1 large Lemon, pared zest
  • handful mint leaves

Method

1. Place the spices in a small pan and pour over enough oiling water to cover. Bring to a simmer and add the apple juice. Gently warm through, but don't boil. Transfer to a large pan.

2. Add the gin, lychee liqueur and honey. Reduce the heat and pour in the wine. Simmer for about five minutes before adding enough sugar to sweeten. Serve warm.
