Autumnal Punch

Method

 
1. Place the spices in a small pan and pour over enough oiling water to cover. Bring to a simmer and add the apple juice. Gently warm through, but don't boil. Transfer to a large pan.

2. Add the gin, lychee liqueur and honey. Reduce the heat and pour in the wine. Simmer for about five minutes before adding enough sugar to sweeten. Serve warm.

Ingredients

3 x 4 cm cinnamon sticks, broken
5 Cloves, lightly crushed
1 Nutmeg, grated
100ml boiling water, approximate quantity
250ml pressed apple juice
450ml gin
250ml lychee liqueur
75ml clear honey
700ml Sauvignon blanc wine
Sugar, to taste
1 large orange, pared zest
1 large lemon, pared zest
handful mint leaves
