Carrot, Courgette and Coriander Soup

Method

 
Place the onion, garlic and leeks in a pan with hot olive oil and allow them to soften for a couple of minutes. Then add the carrots, courgettes and porcini mushrooms in to the Big Chopper of your Braun handblender.

Add these items to the pan and cook until ingredients are reduced while continuing to stir. Once the mixture is thoroughly mixed, add the coriander and stir through.

Add the stock and allow the soup to simmer for 15 minutes. Finally remove from the heat and use the metal shaft attachment for the hand blender to blend the ingredients to a smooth consistency.

Ingredients

6 large Carrots
2 large courgettes
2 tbsp dried porcini mushrooms, soaked in warm water for 20 minutes
1 leek
2 garlic cloves
1 red onion
4 tbsp chopped Coriander
2 tsp Olive oil
1 litre chicken or vegetable stock
