Ingredients
For the gremolata
For the squid
For the sauce
- 3 tbsp Olive oil
- 3 banana Shallots, diced
- 250g cherry tomatoes, chopped
- 150ml White wine
- dried red chilli flakes, to taste
- black pepper
Method
1. To make the gremolata, combine the lemon zest and juice with the parsley, garlic and breadcrumbs. Stuff the squid with the gremolata mixture.2. Heat the oil in a frying pan over a moderate heat, and fry the squid for 2 minutes.
3. To make the sauce, heat the oil in a saucepan and fry the shallots over a gentle heat until softened.
4. Add the cherry tomatoes and white wine and sprinkle in chilli to taste. Cook for 4 minutes, season with salt and pepper and serve.
5. Pour the sauce over the squid and serve.
