Spiced tea (masala chai)

Blow away blustery blues with Monisha Bharadwaj's hot mugs of masala chai
Ingredients
- 600 ml water
- large pinch ground cardamom
- 2 Cloves, bruised
- ½ tsp allspice berries
- 1-2 blades Lemon grass
- tea leaves, to taste
- Milk, to taste
- Sugar, to taste
Method
1. Boil the water with the cardamom, cloves, allspice and lemon grass.2. Simmer for a minute, before adding the tea leaves. Cook, over a low heat for 1 minute.
3. Pour in the milk, reheat, and strain into mugs. Serve piping hot with sugar, if liked.
