Hunza apricots have a particularly intense, caramel-like flavour, and are put to good use in this recipe by Monisha Bharadwaj

Ingredients

  • 300 g Dried apricots, (Hunza) stones removed
  • 100g granulated sugar
  • 600 ml water
  • 2 tbsp Almonds
  • 4 tbsp double cream

Method

1. Combine the apricots with the sugar in a saucepan. Pour over the water and simmer until the fruit is soft and pulpy - this should take about 15 minutes.

2. Leave the apricots to cool in the syrup before spooning into individual serving glasses. Serve chilled, sprinkled with almonds and drizzled with cream.
