A brilliant brunch or sexy starter, Guy Wolley's egg-topped ham and asparagus dish is garnished with a grating of Parmesan and a drizzle of olive oil

 

Serrano ham with asparagus and fried eggs

Method

 
1. Add the asparagus to a large saucepan of boiling, salted water and cook until tender - about 5-8 minutes.

2. Pour the olive oil into a hot frying pan over a medium heat. Crack the eggs directly into the pan and fry until completely set.

3. Lay the ham on two serving plates, and arrange the boiled asparagus and fried eggs on top. Grate the parmesan over and add a final drizzle of olive oil.

8 asparagus spears
2 tbsp Olive oil
4 Eggs
10 thin slices Serrano ham Serrano ham
50g Parmesan
