Thai flavourings add a special touch to these quick and easy chicken burgers from Martin Blunos

Ingredients

For the burgers

  • 450g chicken, (thigh and breast meat), skin removed
  • 1 red chilli, seeds removed and chopped
  • 1 tsp Thai curry paste
  • small handful Coriander, roughly chopped
  • 1 small Shallots, chopped
  • 1 clove Garlic, crushed
  • 1/2 tsp Ginger, fine chopped
  • 1 lime, juice only
  • 3 tbsp Olive oil, for frying
  • sea salt and freshly ground black pepper

For the salad

  • large bunch flat leaf Parsley
  • 1/2 red Onion, chopped finely
  • 1 tbsp Olive oil
  • 1 lime, juice only
  • sea salt and freshly ground black pepper

Method

1. Dice the chicken meat and place in a food processor with the other ingredients. Blitz until well combined.

2. Using wet hands, shape the meat into even-sized burgers.

3. Heat the oil in a non-stick frying pan and fry the burgers for 4 minutes on each side, until golden and cooked through.

4. For the salad, combine the parsley and onion in a salad bowl.

5. Pour in the olive oil and lime juice and season to taste with salt and freshly ground black pepper. Toss well and serve straight away with the burgers.
