Watermelon and berry salad

Method

 
1. Scoop out 2cm diameter balls from the melon - this is best done with a Parisienne scooper, also known as a melon baller. Leave on one side.

2. Cut away any remaining melon flesh and tip into a food processor with the lemon juice, sugar and gin. Blend until puréed and strain the mixture through a sieve to get rid of any stray fibres. Keep hold of the empty melon shell - the salad will be served in it.

3. Combine the sieved purée with the melon balls and berries.

4. Pile the mixture into the empty melon shell, sprinkle with icing sugar and serve straight away with crème fraiche.

1/2 watermelon
1/2 lemon, juice only
1 tbsp caster sugar
1 tbsp gin
300g Strawberries
250g Raspberries
300g Blackberries

to serve

icing sugar
crème fraîche
