Alan Coxon rustles up a real treat with his take on the traditional easy-make Mexican avocado dip known as guacamole

Ingredients

  • 1 ripe avocado, peeled, stoned and roughly chopped
  • 2 ripe Tomatoes, peeled, seeds removed and roughly chopped
  • 75g Spring onions, roughly chopped
  • 1 clove Garlic, chopped
  • 1 fresh jalapeño chilli, seeds and stem removed
  • 25g Coriander
  • 125ml lemon juice
  • 50ml extra virgin Olive oil
  • fine sea salt and freshly ground black pepper

Method

Place all the ingredients except the seasoning into a food processor, season to taste and blitz until smooth. Serve in a chilled bowl.
