Alan Coxon rustles up a real treat with his take on the traditional easy-make Mexican avocado dip known as guacamole
Ingredients
- 1 ripe avocado, peeled, stoned and roughly chopped
- 2 ripe Tomatoes, peeled, seeds removed and roughly chopped
- 75g Spring onions, roughly chopped
- 1 clove Garlic, chopped
- 1 fresh jalapeño chilli, seeds and stem removed
- 25g Coriander
- 125ml lemon juice
- 50ml extra virgin Olive oil
- fine sea salt and freshly ground black pepper
