Method

 
Place all the ingredients except the seasoning into a food processor, season to taste and blitz until smooth. Serve in a chilled bowl.

Ingredients

1 large ripe avocado, peeled, stoned and roughly chopped
2 ripe Tomatoes, peeled, seeds removed and roughly chopped
75g Spring onions, roughly chopped
1 garlic clove, chopped
1 fresh Jalapeno chilli, seeds and stem removed
25g Coriander
125ml lemon juice
50ml extra virgin olive oil
fine sea salt and freshly ground black pepper
