Flambéed mangosteen and rambutan salad

Look out for mangosteen and rambutan in the exotic fruit section of your supermarket - Janet Brinkworth's delicious tropical salad is great with pancakes

Ingredients

  • 30g Butter
  • 3 mangosteens, segmented
  • 4 rambutans, stones removed, and cut into chunks
  • 2 pieces Preserved stem ginger, cut into fine julienne
  • 3 tbsp orange liqueur
  • 3 tbsp stem ginger syrup

Method

1. Heat a frying pan over a medium-high heat and add the butter. When the butter begins to foam, add the mangosteen, rambutan and ginger. Stir fry for 1-2 minutes until heated through.

2. Add the orange liqueur and tip the pan towards the heat so that the liqueur is set alight. Once the flames have subsided, add the ginger syrup. Swirl to combine and serve immediately.
