Banana and raisin bran muffins

Start the day the healthy way with these fibre-filled flavoursome raisin and banana muffins from James Tanner
Ingredients
- 85g wheat bran
- 235ml Buttermilk
- 80ml vegetable oil
- 1 Egg, beaten
- 95g brown sugar
- 2 drops vanilla extract
- 125g plain flour
- 1 tsp Bicarbonate of soda
- 1/2 tsp Baking powder
- 1 pinch Salt
- 25g raisins
- 2 Bananas
Method
1. Combine the wheat bran and buttermilk, and leave on one side for 10 minutes.2. Preheat the oven to 190C/gas 5, and lightly butter a 12 cup muffin tin.
3. Whisk the oil, egg, sugar and vanilla until blended. Add to the buttermilk mixture and stir to combine. Sieve the flour, baking soda, baking powder and salt, and stir into the main mixture along with the raisins.
3. Mash the bananas with the back of a fork.
4. Spoon a small amount of muffin mixture into the base of each muffin cup, and add a teaspoon of mashed banana.
5. Pour the rest of the mixture over the bananas, and bake for 20 minutes - until golden and firm to the touch. Serve warm.
