Banana and honey flan
Method
1. Lightly butter a 20cm tart tin. Roll out the pastry to line the tin and pop in the fridge to chill.
2. Place the honey and water in a heavy based pan and bring to the boil. Cook, until the mixture turns a caramel colour. Remove from the heat and add the banana slices. Set aside for 10-15 minutes.
3. Meanwhile put the eggs, milk, flour, quark, vanilla extract and brown sugar into a large mixing bowl and whisk until smooth.
4. Set the oven to 180C/gas 4. Remove the pastry case from the fridge and bake blind in the oven for 10-15 minutes.
5. Fill the case with the batter. Drain the bananas from the syrup and scatter over the batter. Cook for 30 minutes, until set. Turn out from the tin and serve warm, drizzled with the honey syrup.

110g short crust pastry3 tbsp Acacia honey
50ml water
3 bananas, (or more, depending on size), sliced
3 large Eggs
250ml semi-skimmed milk
75g plain flour
50ml quark
0.5 tsp vanilla extract
50g brown sugar
