Alan Coxon whips up a fabulous finale to any meal with his speedy variation on the toasted oatmeal dessert cranachan

Ingredients

  • 50g luxury muesli
  • 380ml orange liqueur, such as Cointreau
  • 1 tbsp clear Honey
  • 300g Mascarpone
  • 2 egg whites
  • 500 g frozen mixed berries

Method

1. Toast the muesli in a dry pan and place in a bowl. Pour over the honey and half the orange liquer, and set aside. 

2. Whisk the mascarpone until smooth, and fold into the soaked muesli.

3.  Whisk the egg whites until light and fluffy and fold into the cheese and muesli mixture.

4. Place the frozen fruits into the base of four chilled glasses and drizzle with a little orange liqueur.

5. Scoop over a dollop of the mascarpone and muesli mixture and repeat the process a second time, finishing with the mascarpone.  Dust lightly with icing sugar, decorate with a sprig of mint and serve immediately.
