Lemon curd and strawberry trifle

A dessert to die for from Silvano Franco... luscious lemon curd, buttery Madeira, strawberries, custard and double cream!

Ingredients
- 200 g madeira cakes
- 6 tbsp lemon curd
- 150ml orange juice, smooth-style
- 250g Strawberries, small, hulled
- 400g custard, prepared
- 200g fromage frais
- 300g double cream
Method
1. Cut the cake into slices 1 centimetre thick. Spread half of them with 3 tablespoons of the lemon curd then top with the other slices to make sandwiches.2. Arrange the sandwiches in a trifle bowl across the bottom and slightly up the sides, making sure they are neatly packed together. Drizzle over half the orange juice.
3. Arrange most of the strawberries on top of the cake layer, saving a few pretty ones for the top of the trifle.
4. Mix together the custard and fromage frais and spoon over the strawberries.
5. Whip the cream until almost holding its shape, and then pour it over the custard. Cover and chill for a minimum of 2 hours, until ready to serve.
6. Just before serving, mix together the remaining 3 tablespoons of curd and the orange juice to make a smooth, runny sauce.
7. Arrange the reserved strawberries on top of the trifle, drizzle over the sauce and serve immediately.

Tastes delicous. Flavour improves when eaten the next day. Personally I feel the recipe needs to have a larger quantity of Madeira cake.
