Smoked cod roe on toast

For a quick snack or snappy supper, Ed Baines transforms smoked cod's roe into a tasty and tempting topping for toast.
Ingredients
Method
1. Put the double cream, butter, lemon juice, mustard shallot and parsley into a saucepan and heat together. Bring to the boil and remove from heat.
2. Add the cod roe and mix thoroughly.
3. Toast the bread.
4. Spread a generous portion of the cod roe mixture over the toast and sprinkle with paprika.
5. Serve with a dressed rocket salad.
