4 tbsp Olive oil
2 red onions, diced
3 cm fresh root ginger, grated
1 large garlic clove, finely chopped
2 ripe mangoes, finely diced
6 tbsp lime, juice
2 tsp light brown sugar
1 pinch Salt
0.25 tbsp freshly ground black pepper
2 red chillies, seeds removed and finely chopped
1 tbsp mint leaves, shredded
