Exotic noodles, pungent wasabi, and citrusy lemon, make up an imaginative summer salad by Ching-He Huang

For the dressing

  • 75ml peanut oil
  • 1 tbsp light Soy sauce
  • 1 tbsp Mirin, (Japanese rice vinegar)
  • 1/2 tsp Wasabi
  • 1 tbsp lemon juice

Method

1. Heat a large saucepan of water, and when boiling, add the noodles and cook until tender - about 3 minutes. Drain the noodles in a colander and run under the cold tap, This keeps the noodles from sticking to each other. Drizzle with peanut oil and leave them on one side while you prepare the vegetables.

2. In a mixing bowl, combine the carrots, spring onions, red and yellow peppers and prawns. Divide the noodles between six plates, and top with a pile of vegetables and prawns.

3. Whisk together the dressing ingredients and drizzle over the salad. Scatter with sesame seeds before serving.
