680g Morello cherries, pitted
2 tbsp cherry brandy
225ml double cream
For the base
6 large Eggs, seperated150g caster sugar
50g Cocoa powder, sifted
For the topping
100g dark chocolate, 70% cocoa solids1 tbsp morello cherry jam
0.5 tsp Cocoa powder, for dusting
