Crisp golden muesli combine with fresh blueberries to make a dynamite duo from Martin Blunos

Ingredients

  • 250g Blueberries
  • 135ml schnapps, or vodka
  • 80g caster sugar
  • 200g luxury muesli
  • 2 tbsp demerara sugar
  • 450ml double cream

Method

1. Place 200g of the blueberries in a saucepan with 90ml of the schnapps and the caster sugar. Bring to a fast boil and cook for 10 minutes, stirring all the time until the heat, leave to cool and add the remaining blueberries.

2. Set the oven to 180C/gas 4. Spread the muesli out on a non-stick baking sheet and sprinkle over the Demerara sugar. Place on the top shelf of the oven and bake for a few minutes until the muesli browns a little. Remove from the oven and leave to cool.

3. Whip the double cream to soft peaks and mix in the remaining shot of schnapps.

4. Fold the toasted muesli into the whipped cream and schnapps.

5. Place a little of the blueberry mix in the bottom of a martini glass. Spoon over a little of the cream mixture. Add a little more blueberry mix and repeat with cream finishing with blueberry mix.
6. Add a sprig of mint and serve with more schnapps
