Enjoy a touch of spice with Mike Robinson's delicious, Thai-inspired chicken burgers flavoured with garlic, ginger and chilli

Ingredients

  • 200g minced chicken
  • 30g Coriander, stalks and leaves
  • 1 red chillies, finely chopped
  • 2 cloves Garlic, finely chopped
  • 1 pinch black pepper
  • 1 stalk Lemon grass, finely shredded
  • 1 piece Ginger, (3cm)finely chopped
  • 1 tbsp dark Soy sauce
  • 2 Thai lime leaves, finely shredded
  • 1 limes, juice
  • 6 Spring onions, finely chopped
  • 1 tsp Sesame oil
  • 1 tbsp vegetable oil
  • 1 ciabatta bread, sliced and toasted
  • 1 bunch Rocket, to garnish

For the chilli mayonnaise

  • 2 tbsp mayonnaise
  • 25 g dried red chilli flakes
  • 2 tsp fresh lime juice
  • 1 clove Garlic, crushed

Method

1. In a mixing bowl, mix together the chicken, coriander, chilli, garlic, salt and freshly ground pepper, lemon grass, ginger, soy sauce, kaffir lime leave, lime juice and spring onions.

2. Set aside for 20 minutes, to allow the flavours to absorb.

3. Meanwhile, make the chilli mayonnaise. Mix together the
mayonnaise, chilli flakes, lime juice and garlic. Set aside.

4. Wet your hands and use them to form the chicken mince mixture into small patties.

5. Heat the sesame and vegetable oil in a large frying pan. Fry the patties for 5 minutes on each side.

6. Serve the freshly fried patties on toasted ciabatta bread, topped with a dollop of chilli mayonnaise and garnished with rocket.
