Peanut butter puddings with chocolate sauce

Ingredients

For the ganache sauce

  • 125 ml milk
  • 225 g dark chocolate, 70% cocoa, roughly broken up
  • 125 g smooth peanut butter
  • 100 ml double cream

Method

1. Preheat the oven to 200C/gas 6. In a mixing bowl, combine the flour, bicarbonate of soda, baking powder and salt. 2. In a separate bowl ,using an electric whisk, whisk the peanut butter, sugar and butter. 3. Beat in the eggs, one by one, to the peanut butter mixture. Beat in the vanilla and buttermilk and add the beaten mixture to the flour. 4. Divide among 12 greased and lined dariole moulds. Place the filled moulds in a deep roasting tray, pour hot water in the tray around the dariole moulds and bake in the oven for 25 minutes. 5. To make the ganache sauce, bring the milk to scalding point in pan and stir in the plain chocolate and peanut butter. 6. Pour the sauce over the puddings, drizzle with cream and serve piping hot.
