Peanut butter puddings with chocolate sauce

Peanut butter-lovers will enjoy tucking into Simon Rimmer's distinctly indulgent puds, served with rich chocolate sauce
Ingredients
- 675g plain flour
- 5g Bicarbonate of soda
- 7g Baking powder
- 1 pinch Salt
- 225g crunchy peanut butter
- 225g caster sugar
- 100g Butter
- 2 Eggs
- 5ml vanilla extract
- 280ml Buttermilk
For the ganache sauce
- 125ml Milk
- 225 g dark chocolate, 70% cocoa, roughly broken up
- 125g smooth peanut butter
- 100ml double cream
Method
1. Preheat the oven to 200C/gas 6. In a mixing bowl, combine the flour, bicarbonate of soda, baking powder and salt.2. In a separate bowl ,using an electric whisk, whisk the peanut butter, sugar and butter.
3. Beat in the eggs, one by one, to the peanut butter mixture. Beat in the vanilla and buttermilk and add the beaten mixture to the flour.
4. Divide among 12 greased and lined dariole moulds. Place the filled moulds in a deep roasting tray, pour hot water in the tray around the dariole moulds and bake in the oven for 25 minutes.
5. To make the ganache sauce, bring the milk to scalding point in pan and stir in the plain chocolate and peanut butter.
6. Pour the sauce over the puddings, drizzle with cream and serve piping hot.
