Rustic Garlic and Bread Soup

Method

 
1. Bring the water to boil and add the oil and garlic.

2. Cook for 10 minutes, and then season to taste with salt and freshly ground black pepper.

3. Add the bread.

4. Simmer for another five minutes or until the bread has broken down and thickened the soup.

5. Whisk the two eggs with the vinegar until smooth and add slowly to the soup stirring vigorously all the time, taking care not to allow the soup to boil again or the eggs will split.

6. Serve immediately.

Oh, one further thing. Use a slow-cooker and simmer it for 4-6 hours. And lay some grated or sliced cheese over the crust and let it melt in. Delicious!!!

Fantastic. Going to be a regular of mine. And if you are not going anywhere for a few days, increase the garlic x2, x3, x4 it gets better!!!

1 tbsp Olive oil
10 garlic cloves, peeled and crushed
1 pinch salt and fresh ground black pepper
2 slices of ciabatta, stale
2 Eggs
1 tsp white wine vinegar
