Potatoes with fresh herbs and olive oil (patate al forno)

Method

 

1. Pre-heat the oven to 200°C/gas 6. Place the potatoes in a roasting pan and sprinkle with the basil, sage, rosemary and garlic. Season with salt and pepper.

2. Drizzle olive oil over the potatoes and roast for about 45 minutes, or until golden brown.

700g Potatoes, peeled, thinly sliced
1 handful Basil, roughly chopped
1 tbsp Sage, roughly chopped
1 sprig Rosemary, chopped
2 garlic cloves, chopped
120ml extra virgin olive oil
