Spiced beef

Method

 

1. Rub the sugar well into the beef and allow to stand in the refrigerater for 12 hours.

2. Then rub the saltpetre and allspice over the meat and let it stand for another 12 hours in the refrigerater, then rub in the salt. Leave for a week in a refrigerator, turning daily.

3. Place the beef and the turnip in a large, heavy-based saucepan and cover with cold water.

4. Bring to the boil and leave to simmer for an hour and a half. Transfer to a serving dish and leave to cool. Serve cold.

2kg rump of beef, thick flank
80g Sugar
40g ground allspice
10g salt petre, finely ground
1 turnip, peeled and roughly chopped
