Chestnut Mousse with Griddled Pears

Method

 
1. Heat a griddle pan until hot. Cook the pear slices on the griddle pan for 1-2 minutes each side, until lightly charred.

2. Place the unsweetened chestnut puree in a large mixing bowl, mash with a fork and mix until smooth.

3. Gently fold in the lightly whipped double cream and add brandy and icing sugar to taste.

4. Spoon into serving glasses and top with the griddled pears. Serve with sponge fingers.

Ingredients

2 Pears, ripe and sliced
200g Chestnut purée, unsweetened
300ml double cream, lightly whipped
1 dash of Brandy, to taste
1 tbsp icing sugar, to taste
