Rachel Allen's cooling yogurt works particularly well with spicy dishes - serve it really chilled for best results

Ingredients

  • 400 ml Greek yogurt
  • 0.5 cucumber, seeds removed and finely diced
  • 2 tbsp chopped coriander, or mint
  • 0.5 tsp freshly ground salt and black pepper, or to taste
  • 4 tomatoes, chopped

Method

Tip the yogurt into a bowl and add the cucumber, coriander, salt and pepper, and, tomatoes, if you're using them. Serve the raita chilled.
