Spiced mushroom soup with sichuan pepper
Method

2 tbsp Sesame oil250g shitake mushrooms
1 leek, sliced
5 cm piece of fresh ginger, finely chopped
1 red chilli, finely chopped
2 garlic cloves, crushed
1 bunch bunch spring onion, chopped
2 lime, juices
1 bunch Coriander, chopped
1 litre vegetable stock
50ml Soy sauce
1 tsp Sichuan peppercorns, crushed
