Brandy truffles

For a simple recipe try Mike Robinson's delicious dark chocolate truffles, with a subtle cognac flavour
Ingredients
- 100 g dark chocolate, 70% cocoa solids
- 50ml espresso coffee
- 50ml Cognac
- 1 tbsp Cocoa powder
Method
1. Melt the chocolate in a bowl over a pan of simmering water.
2. Mix together the melted chocolate, coffee and cognac, stirring well, and set aside to cool and harden.
2. When nearly firm, roll into balls and roll in the cocoa powder.
3. Harden in the refrigerator for 30 minutes.
