  • 500 g vacherin, ideally Vacherin Mont D'Or cheese
  • 2 sprig thyme
  • 1 clove garlic, sliced

Method

1. Take the whole cheese and make tiny indentations in it with the blade of a small sharp knife. Push the sprigs of thyme and garlic slices into the cheese. Replace the lid.

2. Set the oven to 180°C/gas 4. Wrap the cheese in aluminium foil and bake, on the middle shelf, for about 20-25 minutes. Remove the foil and its lid and serve warm, surrounded by cooked potatoes or crusty bread.
