Method

1. Preheat the oven to 180ºC/gas 4.

2. Place the pancetta between two baking sheets and roast in the oven for 20-25 minutes. Set aside to cool.

3. Place the cream, honey and orange zest into a bowl, whisk in the olive oil and season with salt and freshly ground pepper.

4. Place the lettuce, smoked chicken and two tablespoons of the dressing into a bowl and season with salt and freshly ground pepper. Toss evenly so that all the leaves are covered.

5. Place onto a plate and stack, giving as much height as possible. Then drizzle the rest of the dressing around the plate.

6.Place the pancetta strips on top of the leaves and sprinkle the hazelnuts around the plate. Finally, arrange the apple in a fan on top of the pancetta and serve.
