Chorizo with Red Wine and Parsley

Method

 
1. Heat the olive oil in a frying pan over a high heat. When the oil begins to smoke, add the chorizo tossing frequently. Then add the red wine, carefully flame and allow the flames to die down.

2. Serve six slices of chorizo each on two serving plates. Drizzle the sauce from the pan over the chorizo, followed by the chopped parsley and freshly ground pepper.

Ingredients

1 tbsp extra virgin olive oil
12 slices chorizo sausage
1 dash of Red wine
1 handful chopped parsley
1 pinch freshly ground pepper
