Method

Preheat the oven to 160C/gas 2. Cut the cabbage into quarters and remove the hard woody stalk. Finely shred the cabbage and set aside. Peel, core and finely chop the apples, and soften in butter for about five minutes.

Peel and finely chop the onions, add to the apples in the pan along with the crushed garlic. Soften for a further five minutes before sprinkling in the spices and sugar.

Tip in  the red cabbage, mix well, season and add the vinegar.
Cover with a tight fitting lid  and bake for about two hours until really soft. Serve hot with roast turkey or a joint of glazed ham.

Made this for Xmas Dinner and it was fantastic. Keep the left overs in the fridge, and serve cold with ham, beef, in fact any cold meat or a sharp cheddar with salad.
