Ingredients

  • 5 tbsp Italian Olive oil
  • 1 medium Onion, finely sliced
  • 3 medium Italian Sausages, chopped into chunks
  • 1 handful walnut halves, crushed
  • 1 medium red chilli, chopped
  • 200g Sun-dried tomatoes, in oil
  • 2 tbsp finely chopped flat leaf Parsley
  • 350g pappardelle, dry egg
  • 1 pinch Salt
  • 100g parmesan shavings

Method

1. Heat the olive oil in a frying pan. Add the onion and gently fry the onion until soft. Add in the sausage chunks and fry until cooked through.

2. Add the walnuts, chilli, sun-dried tomato and parsley.
Season with salt and cook for a further two minutes.

3. In the meantime, cook the pappardelle in a large pan of salted boiling water until al dente, drain and place into the sauce. Mix well and serve immediately with shaved Parmesan on top.
