Carrots and orange combine with zingy ginger, cinnamon and toasted cumin in this simple to make, lip smacking soup from Monisha Bharadwaj

Ingredients

  • 1 tbsp sunflower oil
  • 300g Carrots, finely grated
  • 2.5 cm cinnamon sticks
  • 0.5 tsp Ginger, grated
  • 600 ml water
  • 0.5 tsp Cumin seeds
  • 4 tbsp orange juice
  • 0.5 tsp Sugar
  • 1 pinch Salt

Method

1. Heat the oil in a saucepan.

2. Add the carrots, cinnamon and ginger and stir for a few minutes.

3. Pour in the water and bring to the boil.

4. Reduce the heat and simmer for about 15 minutes until the carrots are cooked.

5. In the meantime, toast the cumin seeds in a saucepan until dark and grind to a powder in a mortar; set aside.

6. Liquidise the carrot mixture in a blender until smooth.

7. Add the orange juice, sugar, ground cumin and salt to taste. Reheat and serve immediately.
