Enjoy a taste of sweet success with this speedy syrup sponge from James Martin


1. Lightly butter and flour a pudding basin with a 1.5 litre capacity.

2. Blend the flour, eggs, sugar and butter together in a food processor.

3. Spoon the syrup into the bottom of the prepared basin and pour the mixture from the food processor on top.

4. Cover the basin lightly with cling film and microwave on a high setting for four minutes.

5. Remove pudding and tip onto a serving plate. Serve hot with fresh supermarket custard.


  • 100 g self-raising flour
  • 2 eggs
  • 100 g caster sugar
  • 100 g butter, softened
  • 25 ml milk
  • 4 tbsp golden syrup

This has to be the easiest recipe ever! My family love it, and it is sure to be very frequently used. Yummy!

First pud ive made in microwave and sooo simple.. didnt have a food processor either just whisked them all together instead and bingo 1 lovely pud!!! :D, might even do another one in 5mins :p.

This is the best microwave pudding I have ever made and its so easy to swap golden syrup for jam or even tinned fruit.
