Pork and spinach stir fry

Tony Tobin's tasty stir fry is low in fat but high in flavour and creates a mouth-watering main meal in minutes
Ingredients
- 1 tbsp Olive oil
- 200g pork, fillet, cut into strips
- 1 clove Garlic, sliced
- 2 Spring onions, sliced
- 1 red chillies, sliced
- 5 cm piece Ginger, sliced
- 2 tbsp white sesame seeds
- 300g spinach leaves
- 2 tbsp light Soy sauce
- 1 tbsp toasted Sesame oil
Method
1. Heat the oil in a wok over a high heat and fry the pork strips.2. Add the garlic, spring onions, chilli and ginger. Continue to cook.
3. Stir in the sesame seeds and half of the spinach. Stir-fry for another minute or so and then add the soy sauce and sesame oil.
4. Turn the remaining uncooked spinach through the stir-fry and serve immediately with steamed brown rice.
